basque burnt cheesecake


430g cream cheese (room temp)
120g castor sugar
3 large eggs
270g heavy cream
20g cake flour
1 tsp vanilla extract
1 tsp lemon juice

  1. lay two layers of baking paper on a 7″ baking pan
  2. mix the cream cheese and sugar in the mixing bowl
  3. add eggs – one at a time into the mixture and mix well
  4. add in vanilla extract and lemon juice
  5. separately, mix the cake flour and heavy cream until the cake flour is dissolved
  6. add both mixtures together and mix till it is smooth and silky
  7. pour the mixture into the baking pan and bake at 240 degrees c for about 35 min
  8. once the cake is done, leave it to cool in the baking pan
  9. chill for at least 3 hours or overnight before serving
