chocolate & almond cookies


part a
200g hard butter
300g sugar
2 eggs

part b
300g plain flour
100g ground almond
300g almond flakes
250g chocolate chips
1 tsp bicarbonate soda

  1. beat part a until mixture is pale and creamy
  2. add in eggs gradually one at a time and continue beating
  3. add in part b to the mixture and mix well
  4. roll mixture into log shapes using parchment paper
  5. put in chiller for about 1-2 hours to harden the dough
  6. cut the logs into small slices – thickness as desired
  7. bake at 175 degrees celcius for 18-20 minutes
