fruit pastry cake


100g butter
180g castor sugar
50g sour cream or yogurt
3 eggs
1 tsp vanilla essence
1 tsp lemon or orange zest
210g plain flour
1 tsp baking powder

fruits: peaches, strawberries, blueberries
washed, cut & drain fruits & set aside

  1. cream butter and sugar till light and creamy
  2. mix in eggs one at a time
  3. add in vanilla essence and zest and mix well to combine ingredients
  4. add in sour cream/yogurt into the mixture
  5. add in flour slowly & mix well
  6. pour batter into prepared pan and smooth out surface
  7. arrange fruits on top of the batter do not press fruits down into the batter – decorate as desired
  8. bake in pre-heated oven at 180 degrees celsius for about 60-70 min – or till skewer/toothpick comes out clean (when inserted into center of cake)
  9. cover the top with foil int he last 15 min of baking (at the 45 min mark), this prevents top from getting over-brown
  10. leave cake to cool in the pan for about 5-10 minutes after taking out of oven
  11. take out of mould and transfer to wire rack, let cool completely
  12. [optional] dust cake with snow powder for additional effect
