1000g korean bread flour
68g bread flour
22g milk powder
68g custard powder/milk powder/sugar
213g butter
318g eggs
204g cold water
180g milk
113g black sesame seed

  1. mix all ingredients except sesame seeds in a mix bowl
  2. starting with a slow speed then switch to higher speed
  3. when dough is formed, add in the sesame seeds and mix well
  4. place dough into each 35g, shape into balls
  5. spray some water on the surface of bread before baking
  6. bake at 190 degrees celcius for about 20 mins
  7. check for doneness by colour, especially the side must be brown, if not bread will shrink.
